SAMPLE MENU (Organic ingredients are used wherever possible)
BREAKFAST
Porridge with a choice of raisins or bananas made with oats, and a combination of soya and cows milk
Brown toast and butter
Weetabix
SNACK
Apples and grapes
LUNCH
Shepherds Pie with vegetable mash.
The mash is made up with a combination of potatoes, sweet potatoes, carrot and parsnip with a little grated nutmeg and a dash of milk. The mincemeat is browned with some onions and garlic and then the fat is drained off. A little wholemeal flour is added with a tbsp of Worcestershire sauce and some low sodium vegetable stock. Then some tinned tomatoes, grated carrots and peas are added and simmered until the excess liquid as been absorbed and the sauce is thick. The mincemeat is then put in a baking dish and covered with the vegetable mash and topped with cheese.
Vegetarians have soya mince substituted for the mincemeat. Dessert is natural yoghurt and banana
SUPPER
Homemade Quiche Lorraine with baked beans.
The pastry is made up of flour, butter and milk. Then eggs and milk are mixed together and broccoli, bacon, spring onions and cheese are added. The whole lot is then baked in the oven.
Vegetarians have the bacon substituted for tomatoes.
